IT WOULD MEAN SO MUCH TO ME IF YOU WOULD SHARE MY VIDEOS Clams Casino 12 top neck clams, scrubbed 6 slices bacon 1 stick butter 1/3 cup finely chopped red bell pepper (about 1/2 small pepper) 1/2 cup finely chopped yellow onion (about 1/2 small onion) optional 2 cloves garlic, minced 1/2 cup of fine breadcrumbs (I use ¼ plain breadcrumbs and ¼ panko) 2 tablespoons finely chopped fresh parsley leaves 1 stick of butter 1 lemon cut in wedges Place in a pot with very little liquid and wait until clams open. Use your hands to fully open and separate the shell halves. If you know how to open clams, skip this step. Soften the butter and mix with red pepper. Roll in plastic wrap and let harden in fridge. Working in batches, place the bacon in a large skillet over low heat and cook until just to brown but before it becomes crispy. (Do not cook the bacon until crispy. You want to get it partially cooked and render out some of the fat, but the rest of the crisping up will take place during the broil.) Transfer to a paper towel-lined plate. Once cooled, crumble the bacon into small pieces. Drain off all but 1/4 cup of the bacon grease from the skillet; discard the remaining bacon fat or save for another use. Add the onion (if using) and garlic to the skillet and sauté over medium heat until the onions are translucent for about 3-5 minutes. Transfer to a large bowl. Add the breadcrumbs, parsley, and crumbled bacon, and stir to combine. Divide the bread crumb mixture among the clams, pressing it into a compact mound on top of each. Cut the butter/pepper mixture and put on top of each clam. Place it in oven and broil for about 5-7 minutes. Serve with cut slices of lemon.
